Beet Salad with Manouri Cheese

Ingrédients

  • 4 cooked beets, diced
  • 1/2 red onion, thinly sliced
  • 3 cups baby spinach or mesclun green
  • 1/2 cup manouri cheese, diced
  • 1/2 cup chopped walnuts

Dressing

  • 1/3 cup olive oil
  • 1 tbsp honey
  • 2 tbsp red wine vinegar
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
  • 1/2 tsp dried oregano

Instruction de Cuisson

  • In a small bowl, whisk together all the dressing ingredients and set aside.
  • Add the beets and spinach or mesclun greens in a large bowl. Add the dressing and toss to coat.
  • Top with the manouri cheese and the walnuts.
